A different Sardinian food experience
Many food experiences in Cagliari focus on wine, pasta-making or walking between restaurants. At Museo dell’Olio – Sa Mola de su Notariu, food becomes part of a guided journey dedicated to one of the foundations of Mediterranean cuisine: extra virgin olive oil.
You do not only taste the products. You learn why they taste different, how to recognise quality and how to choose the right pairing for fish, cheese, vegetables, meat, pizza and traditional Sardinian bread.
The experience is led inside the family olive mill where Olio del Tempio is produced from more than 6,000 olive trees cultivated on approximately 20 hectares in southern Sardinia.
What you will experience
Visit a real working olive mill
Discover the modern production facilities and learn how olives are transformed into extra virgin olive oil, from harvesting and milling to storage and packaging.
This is an active family business, not a reconstructed tourist attraction.
Join Francesco’s Olive Oil School
Learn how to taste extra virgin olive oil professionally using smell and taste.
Francesco will teach you to recognise the three essential characteristics of a high-quality EVOO:
FRUTTATO – AMARO – PICCANTE
FRUITY – BITTER – PUNGENT
FRUITY – BITTER – PUNGENT
You will also understand the difference between genuine extra virgin olive oil and low-quality or defective oils.
Taste three family products
The guided tasting includes:
- Olio del Tempio: the family’s Sardinian extra virgin olive oil;
- Limolio: made by processing olives together with fresh lemon;
- Rogo del Tempio: a spicy condiment created with nine Sardinian herbs.
Each product has a different sensory profile and a different use in the kitchen.
Enjoy Sardinian food pairings
The three products are paired with a selection of Sardinian foods, including traditional carasau bread, natural olives, local cured meats and other seasonal specialities.
A local sparkling wine is served to accompany the convivial part of the experience.
Dietary requirements, including vegetarian options, should be communicated when booking.
Explore 400 years of olive-oil history
After the modern mill and tasting school, visit the Museo dell’Olio – Sa Mola de su Notariu.
The museum preserves the family’s historic millstones, presses, documents and tools connected to olive-oil production. The Signature Experience also includes the historic underground cistern containing a collection of ancient oil lamps.
